As Xaras is a 100% Mencia red wine made by the Fedellos Do Couto Winery under the D.O Ribeira Sacra.
It is the vineyard of the Pazo do Couto. Mencía 100%. Terraced vineyard located in Ribeira do Sil on a slope of decomposed shale, at an altitude between 350 and 500 meters above sea level. Vineyard practices carried out with organic agriculture. Manual harvest. Fermentation in stainless steel or small containers. Long and smooth maceration, with pigeage (bazoqueo).
Aged for 12 months in old French oak barrels, neutral, of different sizes and demi-muids.
