Quinta de Aves Syrah is harvested at dawn to take advantage of the freshness, after the process of encubado, a process of cryomaceration is carried out, at very low temperatures for a few days, thus enhancing its sensory qualities. It has a small step in new oak barrels providing a touch of softness.
